Twice Baked

There has been a bunch going on but only a couple things are blog worthy. Chad has decided to become a home chef and has been experimenting with food. My mom has been making twice baked potatoes forever so Chad decided he would shake it up a bit and try a new twice baked.

Here’s how:
*Bake a potato (Red is best) make sure to oil and poke holes in it so you get crispy skin.
*Cut the baked potato in half
*Scoop out cooked potato making sure to leave behind an intact potato skin boat.
* Put cooked potato into a mixing bowl
*Add 2 TBSP of butter per potato
*Add 1 TBSP of sour cream per potato
*Add 1/8 cup of cheddar cheese per potato
*Add salt and other seasoning to taste.
Now here’s where Chad made his modifications to make it meal rather than a side
*Add chopped up chicken, cooked carrots, peas and corn and mix in with potatoes.
*Add more seasoning for taste
*Add the mixture back into the potato skin boat
*Top with a sprinkle of cheddar cheese
* Place back in the oven and bake a second time until cheese melts.
